Christmas Cupcakes

I want to wish all my friends Mele Kalilimaka.   Yesterday was a beautiful day for baking.  This was my view of Hualalai in the morning.  She was out in all her glory.  At the end of the blog I will show you a picture of the sunset.
 Quilt Passions had their Christmas party and I made chocolate cupcakes with chocolate ganache and peppermint buttercream frosting and put them on a serving tray lined with a peppermint candy sheet.  Very festive and delicious!  Here is the peppermint tray.
This is pretty easy to make.  Line up your peppermints, a little space between them, on a piece of parchment on a cookie sheet.  Bake them in a 325 degree oven for about 7 minutes.  Watch them really carefully.  As soon as they all blend together pull it out.  Cool slightly, carefully invert and remove the parchment.  Set it back on a cooling rack.  When it is completely cool set it in place.  If you wanted to shape it you could do that while it was still warm.
It would have looked prettier with only twelve cupcakes but I wanted to take as many as I could. 
Now for the sunset.

The streaky sky was interesting.  I was awake at 2:30AM and the sky was still streaky.  The streaks were in the west and went way high.  I would have thought they were northern lights if we weren't in Hawaii.  The streaks were still coming from the same place as they did at sunset and the moon was further north.  It was a lovely picture at night but my camera would not have taken a picture that you could see the unusual effect.
